With 97% of South Australia’s hospitality and tourism industry made up of businesses with less than 20 employees, this is a competitive industry that requires fresh thinking. Industry Day part of the Tasting Australia Festival on 13-20 October celebrating the best Australia has to offer in food, wine and beer will gather industry experts and members to discuss visions for the future. Keynote speaker Roberto Cardone, Partner, Director and National Branding & Marketing Manager of Cibo Espresso, will speak of his career in the restaurant scene and his evolution from restaurateur to major franchisor of the enormously successful Cibo chain. Well-known professionals will present on topics such as the skills shortage, food trends, international trends, marketing strategies and fine dining.

Chris is one of Adelaide’s leading authorities on costing and pricing and consults to manufacturers and service providers about financial management. He says internal influences such as labour costs, overheads and other business-specific costs should be the governing factors in determining accurate costs. Over two workshops he will discuss how to cost products and jobs, how to price them, and how consultancies, trade services, contractors and businesses charging by the hour can calculate costs and prices and make informed decisions.
