Third-generation family business Ferguson Fisheries operates commercial lobster fishing boats from Kangaroo Island.
Ferguson Fisheries enjoys enormous local and international demand for its lobster; the resilience of this species makes it ideal for exporting, product arriving in South East Asia only hours after being caught in South Australia.
But in the catch there is also a high number of large lobsters which have limited appeal in Asia, where consumers prefer small lobsters. So, Ferguson Fisheries has launched a line of ready-to-use premium rock lobster products.
During the past four years, Andrew and Debra Ferguson and their team of 10 employees have come up with a range including ready-to-cook lobster medallions, handpicked lobster meat and lobster oil and glazes—all designed to make lobster more appealing to home gourmets intimidated by the effort involved in shelling the crustaceans.
“With no shelling for the home gourmet to worry about, these products leave no waste or mess and have a preparation time of less than 15 minutes,” Andrew Ferguson says.
“We expect them to reinvent the rock lobster industry in Australia and overseas.”
Ready-to-cook Lobster Medallions are cut from fresh lobster tails using state-of-the-art technology and are vacuum packed in 300-gram servings and blast frozen to retain the full flavour and texture.
